The Aude area of the Languedoc is one of the very best regions for producing quality honey.
The hills of La Clape and the Corbières produce honey renowned since Roman times under the name "Narbonne Honey".
Exceptional density of moorland flowers (no less than 2,000 species recorded), and in particular rosemary, thyme and other aromatic species give unrivalled flavour and scent.
Its reputation reaches back to ancient times, when Cyprus and Egpyt were ready to pay any price to get their hands on the honey of Narbo Martius. In the Middle Ages, the "Roman de Guillaume au Courb Nez" explains that "Nowhere is better honey to be found than in Narbone".
"Narbonne Honey" is traditionally collected around the summer solstice (24 June) before the dry summer months.
